Kim Rose Korkan
Kim took a job as a dishwasher thirty years ago at a funky little Yellow Springs café only to end up executive chef and owner of one of the most respected restaurants in the Dayton area. She lovingly handles the food, savoring the first bite of each new fruit or vegetable of the season, encouraging the employees to taste and respect it as an offering from the farmers. A natural teacher, she patiently guides her staff, instilling her philosophy and deep respect for the hard work that goes into every shift in the kitchen and dining room. She patiently guides her staff to instill her philosophy and achieve her standards and she erupts with celebration and pride and champagne when they succeed. Despite her gentle, softspoken demeanor, she has a sassy wild streak, an easy laugh, a gift for impersonations and always has a comment in song (in her imaginary pocket microphone) for any occassion. She reads all things food: cookbooks, blogs, memoirs, magazines and newspapers. Despite her dislike in joining any club she belongs to WCR (Women Chefs and Restaurateurs) and a book club in town. Always looking to learn and have new experiences, Kim took a sabbatical from the Winds in 1999 and went to California for a year where she studied sushi and worked on a fig farm. In 2004, Kim won a Catherine Brandel scholarship to intern at Chez Panisse, restaurant of the influential Alice Waters. She has also taken classes at CIA (Culinary Institute of America) in Continuing Education and taught classes through Dorothy Lane Market, Cook’s wares and AFS Program in Centerville.
